UPD: Just checked how it is done in Windows - looks like it is even simpler - after the preview pop up appears you can move your cursor anywhere including over other apps as long as you quick, so probably there is just a set of delays of different events. And as long as your cursor moves within that triangle - the popup stays visible, even when you move cursor over the neighboring icons. Which part? So they computed the line between your cursor position and the edge points of the pop up menu shown that you want to click.
